Steps Towards Zero Food Waste

Utah State University Dining Services have been striving to work towards achieving zero food waste. In November of 2015 the Utah Recycling Alliance awarded Dining Services with the Innovative Path to Zero award. We interviewed Alan Anderson, Director of Utah State Dining Services, to see what everyday efforts the staff practices to achieve such an award. These efforts are broken down into three sections: Pre-consumer, Business Pre-consumer, and Post-consumer food waste [1].
